Fresh Fruit

Produce Network is a fruit supplier to London restaurant kitchens: orchard, stone, citrus, vine, soft and tropical fruit on the price-locked list, each line set to the kitchen's agreed spec. Where a line is ordered ready to use, it is graded for ripeness on the day; where it needs to arrive firm, it is set to hold and ripen on the pass.

Fresh fruit is bought daily on the New Covent Garden Market floor and set to the kitchen's spec per line — variety, size, count and the ripeness the kitchen asks for. The list runs the full year and moves with the season: home and continental apples and pears — Braeburn, Russet, Jazz, Pink Lady, Comice, Conference and Williams among them — through the cooler months; berries, cherries, currants and other soft fruit as they come in; citrus from blood orange and clementine to lemon, lime, pomelo and pink grapefruit; and the tropical and exotic lines — mango, pineapple, passion fruit, lychee, dragon fruit, paw paw and fig — carried as the market holds them, with melons and grapes running alongside. Where a kitchen orders a line ready to use, it is graded for ripeness so it eats on the day it lands; where a line needs to arrive firm and ripen on the pass, it is set to hold. Each line is checked at receipt for condition and colour, then delivered chilled inside the contracted 02:00–06:00 window, six days a week, so the fruit is in before the team arrives. If a line is short or off the agreed grade on the market, a like-for-like is called against the spec, never silently swapped, and the shortfall is credited on the statement rather than chased. Every line sits on one price-locked list, on one invoice, on 30-day terms.
