Mushrooms
Cultivated and wild mushrooms, fresh and dried, to the approved spec.
Mushrooms are bought daily at New Covent Garden Market — cultivated lines on a standing spec, wild and seasonal lines as the market carries them. Each line is set to the kitchen's spec (variety, size and count), checked at receipt and delivered chilled inside the contracted 02:00–06:00 window. Wild lines are flagged honestly when available and blocked when they are not — the list never promises what the market cannot hold that week. Dried lines sit on the same price-locked list, on the same invoice.
