The produce list

Plant-Based

Produce Network supplies the plant-based list to London restaurant kitchens: plant milks, dairy-free butters, creams and cheeses, and tofu on the price-locked list, each line set to the kitchen's agreed spec. Barista milks for the coffee station sit beside the cooking and finishing lines, all on the same account list.

Plant-based lines sit on the same price-locked list and the same night run as the produce, so the kitchen takes one delivery before service rather than a separate order for the coffee station. The milks cover the usual bases the kitchen works with — oat, almond, soya, coconut and hazelnut — in standard, unsweetened and barista forms, so the milk that steams for the pass is a different line from the one that goes into a sauce, and both are held on the list at a written price. Alongside the milks are dairy-free butters and spreads, oat and plant creams for cooking and finishing, block and grated vegan cheeses in the mozzarella, cheddar, feta and parmesan styles, cream cheese, and tofu. Each line is set to the kitchen's spec — brand, format and pack — so the reorder is the same line every week, not a near-equivalent. Most are ambient or chilled long-life lines, checked at receipt and delivered inside the contracted 02:00–06:00 window, six days a week, so they are on the shelf before prep. If a line is short, a like-for-like is called against the spec, never silently swapped, and the shortfall is credited on the statement rather than chased. Everything lands on one account list, one invoice and 30-day terms, so the plant-based order is not a separate account to manage.
